Grandma's Oatmeal Muffins
Ingredients
- 1 cup quick-cooking oats [or 1/2 cup oatmeal]
- 1 cup sour milk (buttermilk)
- 1 egg
- 1 cup flour
- 1/2 cup brown sugar
- 1/2 teaspoon salt
- 1/2 cup canola oil [or 1/4 cup oil]
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Soak oatmeal in buttermilk 1 hour (or 15 minutes?)
- Add egg and beat well.
- Add sugar, mix.
- Add canola oil and dry ingredients.
- Bake muffins in hot oven at 400 degrees for 15-20 minutes
- Makes a dozen.
